I have lived in Scotland
for almost 2 years now and ever since moving here I have always been interested
in how to make Scottish tablet. This amazing treat is a medium-hard sugary
confection from Scotland. It has a brittle, grainy texture to it, which makes
it a lot different than fudge. Tablet is normally made with sugar, condensed
milk, butter and water. You can also flavour it with vanilla and whisky and
even add some nut pieces in it. So today, for my very fist blog, I will be
sharing a recipe of how to make your own traditional homemade Scottish tablet.

Serves: 25-30 pieces
Ingredients:
1/4 pint (140ml) water
175g unsalted butter
1 lb (450g) caster sugar
75g condensed milk
Heat the water in a large saucepan. Add your butter into the hot water and let it melt. Before the water reaches to the boil, add and thoroughly disolve the sugar while stirring often. After that, bring the water to the boil and then allow to simmer. When simmering, add the condensed milk. The mixture will then have a very light, creamy colour. Now allow the mixture to thicken until it has a very deep caramel colour. Don't forget to stir! The texture of the mixture will change quickly after around 15-20 minutes from a watery simmer to a thicker bubbling. This is where your large pan is handy as the mixture tends to rise when simmering. When the colour and texture of your tablet has changed into a thick, sticky mixture remove it from the heat and beat it for a good 10 minutes. Pour the mixture into a shallow tray and allow it to cool for 30 minutes. There should be enough mixture for it to be about 1 cm thick on the tray. After cooling cut your homemade treat into small chunks, place them in a bowl or enjoy them next to your cup of tea. Enjoy!
